Episódio 28: Delicious Barbecue (Churrasco delicioso)

I was a barbecue judge for more than eight years.

That meant that I tasted thousands of plates of delicious barbecue, made by both professional chefs and amateurs.

But until 2014, I never competed.

I decided I was ready to see the other side of the competition and how much work goes into creating the perfect barbecue.

Welcome to “Histórias em Inglês com Duolingo”.

Eu sou Helena Fruet.

Adrian cresceu fazendo barbecue.

From 1999 to 2001, I was a special assistant to former U.S.

President Bill Clinton.

I worked in an office in the White House dedicated to racial, ethnic, and religious issues.

Adrian saiu da Casa Branca quando George W.

Bush foi eleito presidente em 2001.

Era uma época de recessão econômica.

It was difficult to find a job then, so I had a lot of time to read.

And I found a book on the history of Southern food called Southern Food at Home, on the Road, in History, by the journalist John Egerton.

That book made me want to learn everything about Southern food, so I started researching.

Barbecue is considered a Southern food, but it’s really in its own category with its own very special history, which has a strong connection to Black culture.

As a Black person myself, I feel a personal relationship to this history.

And through my research, I also learned about the Native American origins of barbecue.

Europeans usually cooked the whole animal over fire at a very high temperature.

But many Native Americans smoked meat or fish in a “low and slow” way, so they put the meat close to the smoke for a few hours, or sometimes, for a few days.

After a while, Europeans started to combine these two styles of cooking meat.

Many of the Black people enslaved by the European colonizers were originally from West Africa, and they imported a lot of cooking traditions.

They used ingredients like chilies, vinegar, and red pepper in their barbecue.

And because they cooked for such long hours and for so many people, they became very good at it.

Adrian tava fascinado.

There are several different styles of barbecue, all named for the places they come from.

Each style uses a different type of meat, sauce, and way of cooking.

I chose to become a certified judge for the Kansas City Barbecue Society because it’s my favorite style.

I ate it while I was growing up, so it makes me think of my childhood.

In that style of barbecue, the categories of meat are pork, beef, and chicken.

And then the judges give it a grade for its texture, taste, and appearance.

As the years passed, I dedicated a lot of my free time to being a judge at these competitions.

I became more and more comfortable being totally honest.

If the texture was bad, I said that.

If it didn’t taste great, I mentioned that too.

It was just part of the job.

I started chatting with a guy from my church who participated in barbecue competitions.

He invited me to join his team for a local barbecue competition in 2014 — and I accepted.

I was super curious to see how he would cook during the competition.

When you’re making food for a competition, you have to think about all of the details.

Everything has to be perfect.

Eles estavam preparando costela e frango.

If you’re on a team, you have to start cooking one or two days before the competition to make sure that your barbecue is ready on time.

After my first day in that kitchen, I really began to understand how complicated the whole process is.

I paid really close attention to detail during this time.

I wanted to be as helpful as possible, and I didn’t want to make any mistakes.

Each cook has their own idea of how they want their barbecue to look and how they want to serve it to the judges.

And our team did everything we could to help our chef with his vision.

Unfortunately, we didn’t win.

But honestly, I was just happy to compete and see the hard work and care that goes into cooking barbecue.

Eating good food that you didn’t have to cook? Yeah, I’ll never get tired of that.

I’m the third person in my family to manage our barbecue restaurant.

It’s our family legacy.

The restaurant is called KC’s Barbecue, for Kansas City.

The K is for “Kansas,” the C is for “City.” That’s the style of barbecue that we serve.

My grandfather was the first to manage the restaurant.

He bought it from a friend in 1968.

After a few years, my grandfather bought the restaurant from his friend.

Soon after that, the community started lovingly calling my grandfather “KC,” like the name of the business.

Desde então, a família Davis e o barbecue caminham juntos.

My earliest childhood memories involve that restaurant.

I spent a lot of time in the kitchen as a kid.

KC’s is famous for several dishes, which we’ve served since my grandfather bought the restaurant.

We serve pork, beef, chicken, and sausage, which we make in the restaurant.

We also have a special seasoning that we put on almost all of our dishes.

KC’s has always served food that makes people feel good.

When I was growing up, it was the place where families came to eat after church.

It was also where teenagers from Berkeley High School came for dates.

Sometimes people from the community came to eat, and they didn’t have enough money, but my grandfather let them eat anyway.

He was always a very generous person.

In 2017, we were getting ready to celebrate “the pit” being open for 50 years.

That’s a long time in the restaurant business.

It was the middle of February, and I was sleeping.

I got a call from my grandma around midnight, and all she said was, “The pit is on fire!”

Kristen pulou da cama e saiu correndo.

The restaurant is very close to my home, so I immediately went there.

When I arrived, I saw my cousin sitting on the sidewalk, in a panic.

I asked, “What happened? What’s going on?” But he didn’t say anything to me.

He was totally in shock.

He said that my uncle drove past the restaurant that evening to make sure everything was OK, like he did almost every night.

That’s when he noticed that there was more smoke than usual coming from the back of the restaurant.

It’s normal to see a little bit of smoke because we cook meat overnight, but my uncle was worried that it was too much.

My cousin said that he watched our grandfather open the back door of the restaurant, which made the fire even bigger.

Then he went inside… When I got there, my grandfather was still in the restaurant, and we were all really worried that something happened to him.

We sat on the sidewalk and watched our family legacy burn.

We didn’t know what to do.

It was a 50-year-old small family business, and we didn’t have a lot of savings.

One of the firefighters was actually a regular customer at the restaurant.

He asked, “Is there anything I can save? Is there anything that is quick and easy for me to get out of the restaurant?” He knew that we had a lot of family heirlooms.

All of the pictures in the restaurant were original photographs.

Some were from the late 1800s.

The firefighter went in and out of the restaurant maybe 15 times while it was burning and he got every picture off of the wall.

It was very emotional.

But then, people started contacting us.

Family members, customers, and friends wanted to help us.

It was amazing! They told us that we were a wonderful family, and that KC’s was an important part of Berkeley’s history.

I thought, “Maybe this celebration can be a fundraiser instead!” I had already ordered shirts with the restaurant’s logo on them, so they were the perfect thing to sell at the fundraiser.

Muita gente respondeu oferecendo ajuda.

For example, my dad’s friend offered us his barbecue smoker, and my dad used it to make barbecue during the fundraiser.

We didn’t ask people to pay for their meals.

Instead, we asked them to make donations to help us rebuild the restaurant.

It was crazy that the community helped us so quickly.

And so, with everyone’s support, KC’s Barbecue was open again in less than a year.

After the fire happened, my father and I became business partners.

I now manage the restaurant, and I decided to give it a newer look.

For 50 years, we only offered baked beans and potato salad as side dishes.

But now that I’m in charge of the restaurant, I decided to change things a little bit.

So now we have some new things on our menu.

We are so proud of our business here in Berkeley, and we’re so lucky to have this community all around us.

When my entire family — my uncles, my cousins, my grandparents — created this business, they created a Black legacy in Berkeley, and I’m so proud to be part of that.
