Episode 1: Le magicien des baguettes (The Baguette Magician)
Duolingo French Podcast
Every morning at 6am, Mahmoud M’Seddi has a routine: he carries a basket, un panier, with 20 of his finest freshly-baked baguettes to his truck, then he drives them to the Elysée Palace in Paris — a personal delivery for the president of France.
This is one of the perks of winning the Grand Prize for Best Baguette in Paris: The baker who bakes the best baguette gets to deliver bread to the president every day for a year.
In 2018, at age 28, Mahmoud was one of the youngest-ever winners of the contest, which all Parisian bakers dream of winning.
Some enter every year… and never make it to the top ten.
Winning the prize was a huge honor for Mahmoud and his family, Tunisian immigrants who opened a bakery in Paris in the 1980s.
And yet, if it had been up to his mother, Mahmoud would have never even become a baker in the first place.
Mahmoud’s earliest memories are of the back of his parents’ bakery in the 14th arrondissement, on Paris’ Left Bank, la Rive Gauche.
His Tunisian father studied to be an electrician in Belgium, and learned to bake on visits to Paris.
He returned to Tunisia with a newfound passion for bread.
Two years later, Mahmoud was born.
The family lived in an apartment above the bakery.
So Mahmoud got the best breakfast treats: he’d come downstairs for a hot pain au chocolat, or a chocolate croissant, just out of the oven.
As he grew up, he worked alongside his parents after school and on weekends.
But working in the bakery with his parents also had its drawbacks.
He never got to sleep in, or go on vacation, like his friends did.
Early on, Mahmoud’s parents could see that he was becoming serious about working in the bakery.
And they worried about it – especially his mother.
They were immigrants who wanted their son to succeed in French society – and working in a bakery was not his mother’s idea of success.
Mahmoud’s mother wanted her son to train for a quote-unquote, “real” career.
“What was wrong with being an engineer, or a lawyer?” she asked.
“You’d work normal hours.
You could take vacation.
It was also more prestigious.” She would be proud, fière, to have an engineer for a son.
»
Baking wasn’t glamorous, it’s true.
None of Mahmoud’s friends wanted to do it.
But he found himself drawn to it, mesmerized by the cakes and pastries, especially in those early days.
As soon as he finished high school, Mahmoud wanted to abandon his studies and start working full-time in the bakery.
This infuriated his mother and she refused to accept his decision.
He was an excellent student.
Why throw it all away?
His father wouldn’t get as involved in the arguments.
Mahmoud thinks it’s because he actually hoped that his son would join him so they could work as a team and expand to other locations.
Mahmoud has two younger sisters who would help out in the bakery during time off from school, but neither of them were as passionate about it as he was.
Mahmoud’s mother insisted.
So he enrolled in a chemistry program, because he had already been drawn to it in high school.
There was something about chemistry that just made sense to him, from his time in the bakery.
Mahmoud worked his way through the coursework and studied for exams.
But a year into the program, he questioned the career path he had started on.
»
He agreed to finish his chemistry degree at the university, but after that, he told his mom he’d be done with school.
Her disappointment was hard to bear.
Maman, elle était déçue.
Elle me disait : « Je voulais te voir devenir ingénieur !
So Mahmoud father and son, père et fils, opened a new bakery near Châtelet, in the center of Paris.
Shortly afterwards, they bought a second bakery together on Boulevard Raspail, near Montparnasse on the left bank.
Things got overwhelming quickly.
Il y a beaucoup de sacrifices.
On ne le voit pas mais il y en a beaucoup.
Mahmoud started working while finishing his degree.
He had been hoping for weekends off, but he worked seven days a week.
He started losing friends because he rarely went out.
But he loved his time in the bakery.
J'aimais beaucoup voir mes clients heureux.
»
As Mahmoud studied chemistry, he became fascinated with the art and science of bread-making, the complexities and variations.
Mahmoud made baguettes using his father’s original recipe, but with his own variations.
And soon, his competitive side kicked in.
He’d always had a competitive streak, like when he played soccer as a kid.
Toujours ! Je n'aime pas perdre.
The year Mahmoud opened his bakery in the 13th arrondissement, a baker down the block had entered the Best Baguette in Paris competition and he got 2nd place.
At the time, Mahmoud was struggling to establish the business with his father, and he saw how the prize attracted customers.
This planted the seed of entering the contest.
Mahmoud’s father had entered the contest many times… and never won.
He had stopped trying.
Mahmoud entered the contest for the first time in 2017.
That year his neighbor at the bakery next door came in first.
To Mahmoud’s surprise, his own baguette came in seventh place!
He had an idea of what the panel of judges was looking for in the perfect tradition, a baguette which is only allowed to have four ingredients: flour, water, yeast and salt.
Besides the flavor, there is also appearance, color and texture.
Mahmoud knew there were techniques to perfect.
The basic process of mixing flour and water, adding salt and yeast, fermenting, kneading, shaping, baking… it was not so simple to get right, and a lot easier to get wrong.
Mon père m’a appris l’essentiel et j’ai ajouté ma propre expérience.
Après, j’ai tout essayé !
Mahmoud spent the entire year deeply focused on his experiments in crafting a winning, magic baguette.
He worked extra shifts, honing his recipe.
He stood in front of the mixer and watched his dough turn.
He stood vigil as it fermented, hour by hour.
J’ai fait des tests, j'ai étudié, j'ai comparé, j'ai questionné… J’ai tout essayé ! On change, on adapte, on change encore.
Mahmoud’s regular customers knew he was gunning for the prize.
They sampled the experiments and offered feedback.
And he soon started to gain new customers by word of mouth, based on the quality of his baguette.
Everyone was cheering him on.
Bravo ! » C’était une vraie motivation pour moi.
Finally, Mahmoud had a baguette that he thought was perfect.
It was handsome enough to attract the judges’ eyes.
The flavor was right on.
The texture was just how he wanted.
It was the image of a baguette tradition, the quintessential French baguette dating back about a century.
The morning of the contest, Mahmoud baked 60 baguettes.
He needed to choose two to submit.
So he picked out ten and asked his father to pick the best two, for luck.
Then he brought his baguettes to the baker’s union on Île St.
Louis for the all-day judging event.
Mahmoud tried to ignore his mounting nerves.
He baked in the afternoon as always.
But his thoughts returned again and again to the judging that was happening across town.
As day turned to evening, Mahmoud started getting phone calls from his friends and family.
They all asked if he had heard anything.
And he said, “No, nothing yet.” Seven o’clock came and went, then 7:15.
By 7:30, he said to himself, “Well, I lost.”
19h35 ou 19h40… On m'a appelé sur mon portable.
Je ne connaissais pas le numéro.
J’ai répondu.
It was the mayor’s office calling to deliver the news: he’d won!
Mahmoud’s baguette got first place.
He was alone with his sales assistant.
She heard him scream, so she screamed too.
He phoned his father, who was in a state of shock.
And then he went to tell his mom.
Mahmoud beat out 180 other bakers for the Grand Prize for Best Baguette in Paris.
At 27 years old, he was one of the youngest bakers ever to win.
In that moment, he knew his life choices had been the right ones.
They led him here.
Mahmoud’s life sped up almost instantly.
Journalists came calling.
Customers poured in.
He was invited on television shows.
It was like a door opened onto a whole world he’d never been a part of.
It was impressive, overwhelming even.
He worked from morning to night, and he loved every minute of it.
And for a year, the best part of Mahmoud’s day was delivering bread to the president.
He baked the baguettes without a dusting of flour, to make sure the president’s suits wouldn’t get dirty.
Mahmoud even had the chance to personally meet the president and his wife — and he’s got the selfies to prove it!
The Grand Prix for the Best Baguette is now in its 25th year.
Anyone can apply, as long as they own a boulangerie in Paris.
Of the past seven winners, four have been the children of immigrants or immigrants themselves.
Mahmoud doesn’t think that’s surprising though, because if anyone can participate, anyone can win.
Winning the prize, it has changed how Mahmoud sees his future, and how he interacts with the world.
It has also shifted how his mother sees him.
When she looks at her son now, it’s in a new way.
With approval.
In April of 2019, Mahmoud participated again in the competition for Best Baguette in Paris — this time as a judge.
Today, he and his father own three bakeries together in Paris: one on Boulevard Raspail and two on Rue Tolbiac.
Mahmoud’s next ambition is to expand internationally.
This story is narrated by Mahmoud M’Seddi and produced by Sarah Elzas, a radio journalist based in Paris.
