Episode 31: Les moines brasseurs (The Beer-Brewing Monks)

Duolingo French Podcast

In 2012, 27-year-old Matthieu Landri was, in most ways, a pretty typical young Frenchman.

He lived near Paris with his roommate, son colocataire.

He had a job and a fun group of friends.

Matthieu especially loved the bonding that took place when they all got together in the evenings over glasses of beer.

Matthieu had a good, busy life…but he knew one big thing was missing.

He felt his work and his friends were keeping him from something that had always been important to him: religion and prayer, la prière.

That summer, Matthieu made a choice that was unthinkable to most of his friends.

But it was something he’d been considering for years.

On June 20th, Matthieu’s parents and four friends drove him to a monastery in Normandy: l’abbaye de Saint-Wandrille, and then, they left him there…because Matthieu had decided to devote his life to his Catholic faith.

He would become un moine bénédictin, a Benedictine monk.

Devenir moine, c’était abandonner ma vie ordinaire.

The next two years of Matthieu’s life would be a probationary period, known as a novitiate.

Matthieu would live the life the monks lived.

Then, if he acclimated well, he would take orders.

He thought this was the path he wanted, but still Matthieu worried: What would become of his friendships? Would he find meaning, or would he come to regret his decision?

When he was 12, Matthieu wasn’t particularly religious, nor was his family.

Only his mother went to church and he would join sometimes.

He also belonged to a Catholic scout group.

One weekend, they took a day trip to a monastery in Normandy, l’abbaye de Saint-Wandrille.

Ils avaient tous l’air heureux, calmes.

Ils avaient une vraie joie de vivre.

As his scouting troop toured the monastery, and learned about its rules — and there were quite a lot of them — 12-year-old Matthieu looked at the monks.

He was stunned by how little they had, yet how happy they seemed.

12-year-old Matthieu felt compelled, then and there, to become one of the monks.

His parents weren’t thrilled about this, but they respected his interest.

So every year, Matthieu came back for a few days to stay at the hotel run by the monastery.

When he was 16, Matthieu told the monks he wanted to take orders.

So Matthieu went to engineering school.

There, he made a solid group of friends — they ran the university bar together and spent evenings talking about life, while drinking beer.

These bonding moments were one of the things Matthieu missed most after joining the monastery, as he adjusted to his new routine as a novitiate.

The Benedictine order is an order of the Catholic faith that was founded in the sixth century.

Aside from prayer and contemplation, two crucial Benedictine tenets are the importance of community and the nobility of manual labor.

So, at first, le père abbé, the abbot, asked Matthieu to help with various tasks.

Manual labor was easy to come by at Saint-Wandrille, but apart from the time spent together in prayer, the community part was lacking.

What had drawn Matthieu to Saint-Wandrille in the first place had been the sense of unity he got from the monks.

But now, it seemed to him that the community wasn’t as tight as he’d always thought.

During his second year of novitiate, things were a bit harder for Matthieu.

He missed his friends and he felt confused about what would bring a greater sense of community to the monastery.

Matthieu sought out an older monk he considered his spiritual father and opened up to him about having doubts about taking his vows, ses vœux.

The next spring, Matthieu took his vows.

With his vows came what he saw as the privilege of being given une charge, or task, within the community.

He didn’t have a say in what he would get to do, but he was eager to have a proper role and to take ownership of it.

While Matthieu was waiting for the abbot to decide on his charge, the community was trying to find an activity that would help sustain the monastery economically.

It was a Benedictine rule that monasteries be financially self-sufficient, so for years, the 30 monks at Saint-Wandrille had been running a photocopying business.

On cherchait quelque chose.

Quelque chose qu’on pourrait faire pour s'unir.

The monks had a big brainstorming session.

They were looking for something more meaningful, an economic activity that would sustain the monastery and bring everyone closer together.

Then someone suggested an old Benedictine craft.

Could Saint-Wandrille start making beer?

The first French beer-making monks began brewing beer in the tenth century.

By 2014, the tradition was still alive in the UK and in Belgium, but in France, the devastation of World War I — and the rapid industrialization that followed — put an end to monastic brewing.

Frère Matthieu loved the idea of launching a brewery at Saint-Wandrille.

At the next meeting, the abbot announced that Saint-Wandrille would become the first French monastery to launch a brewery, une brasserie, since World War I.

Two monks would be given the important task of setting up the brewery and creating Saint-Wandrille’s signature beer.

And the beer would be created by frère Christian…and frère Matthieu.

Matthieu took his new job as a sign.

But the task felt daunting.

Could these two monks, who had never even brewed beer, invent a beer recipe from scratch and figure out how to mass produce a beer that could sustain the monastery for decades to come?

Frère Matthieu and frère Christian set out to create Saint-Wandrille’s first beer.

They went to a brewing school to learn the basics: how to boil the malt with water, adding hops and spices to define the taste, letting the mixture ferment… There were a lot of things to learn in order to create an original recipe.

The two monks wanted to create an authentic monastic beer that reflected Saint-Wandrille’s identity.

There were many things to discuss: the bitterness they wanted, the level of alcohol, whether they wanted to brew a lager, une bière blonde or an ale, une bière ambrée.

Frères Matthieu and Christian wanted to create a beer that was slightly bitter, un peu amère.

To begin, they bought a small brewing station.

Every week, they’d try out a new recipe.

When a new brew was ready, they’d serve it at dinner.

It was trial and error.

With a lot of error.

So frère Matthieu tried something different.

He decided to boil the beer longer than usual and to add caramel malt.

The beer came out of the tank an unusual, dark orange color.

At dinner, when he poured the dark orange beer in each monk’s glass, Matthieu was a bit embarrassed.

Frère Matthieu and frère Christian followed the community’s enthusiasm for the dark orange beer.

Next they decided to follow a medieval tradition and add des épices, spices.

So they created un comité de dégustation, a tasting committee, and they set out to find which spices worked best with their recipe.

Placing the spices on the tips of their tongues, they tried the spices in pairs.

Did cinnamon, de la cannelle, pair well with cumin? Did nutmeg pair well with bitter orange peels, des écorces d’orange amère?

The verdict was unanimous.

Bitter orange peels and cumin! Now, beer-making was about to get serious.

It was time for frère Matthieu and frère Christian to recreate their recipe on an industrial scale so that the monastery could officially launch its brewery.

They weren’t quite des moines brasseurs yet.

It was make or break time.

Frère Matthieu and frère Christian installed professional brewing equipment inside the monastery.

Now, it was up to them to brew their scrappy little recipe with these professional machines.

In May 2016, four years after frère Matthieu arrived at the monastery, two years after he took on his charge, the monastery was finally ready to release its bière d’abbaye to the public.

As the oldest monks meticulously applied the labels to the first bottles, the monastery was also preparing for a big day: the visit of a cardinal coming to bless the new beer with holy water, de l’eau bénite.

A few weeks later, the bottles were ready for distribution.

Now, they would be shared by friends hanging out.

Matthieu used to share a beer with his friends after work.

Now, he shared beers with his fellow monks.

The beer was a hit.

Critics even talked about “the birth of a new monastic beer.” But for Matthieu, something more important was happening.

As the production grew bigger the monastery found new rituals around the brewery.

Now, every Tuesday after lunch, the monks gather to make cardboard boxes and stick labels on the beer bottles.

Everyone can join, including the visitors staying in the monastery.

It’s a time to chat, joke around, and get to know one another.

Frère Matthieu Landri is one of the beer-brewing monks at the only monastic brewery in France and he lives in l’abbaye de Saint-Wandrille in Normandy.

All of the singing and most of the organ music you heard in this episode were recorded at Saint-Wandrille.
