Episode 4: Le vigneron rebelle (The Rebel Winemaker)

Duolingo French Podcast

Olivier Cousin is an old-school vigneron, or winemaker, in France’s Loire Valley.

The 59-year-old has a deep passion for protecting the earth… and protecting the livelihoods of small, independent winemakers.

In the Anjou region, which is less than two hours by car southwest of Paris, Olivier is known as the guy who disdains modern winemaking.

He farms using draft horses instead of machines, harvests by hand, grows grapes without synthetic chemicals, and lets his wine age without additives.

In France, this makes Olivier a wine rebel.

But Olivier would go from seeming crazy to risking becoming a rebel of the state… when his fight for natural wine brought him his fiercest opponent yet — the French government.

Olivier Cousin likes to say that wine tells a story.

His own family story has been steeped in wine of the Anjou region for generations.

Back in 1900, his grandmother’s side of the family had 300 hectares of vines, or vignes — that’s about 740 acres — and they are his family’s legacy.

Olivier had no interest in wine making, or la viticulture, when he was a boy.

He grew up in the city of Angers, 30 minutes and a world away from the rural life of his grandparents.

His parents weren’t involved in wine at all.

It was only when Olivier turned 16 and got his first motorcycle that he started to visit his grandparents on their vineyard.

Je disais à mon grand-père : « Pépé, je veux voir tes caves ! Pépé, est-ce que tu as des bouteilles ? » Il me répondait : « Bien sûr mon petit.

By the time he was 18, Olivier was living more and more under his grandparents’ roof.

He completed a winemaking certificate to learn the basics and help his grandfather in the fields.

While he loved the countryside, one place Olivier didn’t fit in was at school.

When his teachers asked him what he wanted to be when he grew up, he’d tell them: “I just want to be free.” There was only good thing about it: it’s where he met Claire, his future wife.

Years later, they married and moved into a house on his grandparents’ land.

It was 1984 when he officially became a vigneron, a wine-grower.

Claire est devenue éducatrice pour les jeunes.

Elle gagnait 2 000 francs par mois.

On était contents.

The year Olivier turned 25 was when his grandmother passed away, and he inherited 17 hectares of vines.

Things went on much as before, but the world of wine production was changing fast.

The town’s first grape-harvesting machine had arrived, and local farmers started using glyphosate — an herbicide common in products like Roundup.

Per-hectare production started to skyrocket.

At first, Olivier was seduced by the possibilities.

But his grandfather wouldn’t have it.

Olivier came around to his grandfather’s views on herbicides.

But after he passed away in 1992, he couldn’t stop himself from buying equipment to make his work go quicker.

He bought a harvesting machine, a special cooling machine, a grape-crushing machine, and a machine to stick labels onto wine bottles.

It cost him a small fortune.

Ironically, the spike in production caused the price of wine to nosedive.

With everything sold in bulk, it became tough to negotiate a good deal.

Olivier hoped his machines would help him stay ahead, but instead he fell into debt.

On était dans une situation difficile.

On ne pouvait pas s’en sortir.

He wasn’t the only one who hated the machines.

They replaced human jobs, which Olivier’s workers resented.

They found the grape harvesters obnoxious and unwieldy.

Olivier remembers one day when it got stuck in the mud.

His field workers went on strike, chanting:

He sold his grape harvester in 1994 and committed to making wine as naturally as possible, in the tradition of his grandparents.

The following year, he gained organic certification.

It took him several more years to pay off all his debts, but rather than take farming subsidies from the government, he made a conscious move toward “de-growth.”

On avait 12 hectares, puis 10, puis 5, puis seulement 3.

With only three hectares left, Olivier could make an old dream come true: to work his fields with a team of draft horses, or chevaux de trait.

His grandfather had used them until 1978.

It didn’t take long for Olivier to be considered a local pioneer in draft horse farming.

Walking behind a horse, Olivier could let his mind drift into the softness of the earth.

And he knew that he was respecting it, in the way that nature intended.

In addition to tilling the soil with his horses, Olivier uses biodynamic farming, or la biodynamie — using elements in the soil like manure, compost and silica that are already part of nature’s feedback loop.

Meanwhile, Olivier’s methods were resonating with international wine buyers.

But in France, Olivier says other vignerons were still doing everything they could to max out production, regardless of impacts on the environment.

Olivier disliked being a part of this so much that he decided to take a public stand against it.

In 2005, he removed his wine from his region’s certification.

It’s called Appellation d'Origine Contrôlée, or AOC, which is the French certification granted to wines that want to prove that they are from a particular region of the country.

This might not sound that dramatic, but the AOC is like France’s gold seal of approval of a regional wine.

To get the certification, your wine must contain certain grape varieties and be grown in specific places that reflect their terroir — the soil, climate and topography of that location.

Plainly put, the AOC is a status symbol.

It’s enforced by a powerful governing body that controls everything from how wine is cultivated to how much is produced per hectare.

More than anything, though, they control what winemakers can and can’t put on a wine label.

Little by little, more regional zones got their own AOC.

Production skyrocketed.

And then Olivier says priorities shifted.

Olivier says French wine authorities relaxed their criteria for AOC winemaking.

They authorized adding sugar to increase the alcohol level, or additional yeast and sulfites to preserve freshness and prevent spoiling.

He felt like the AOC was stripping away the integrity of the product.

Je faisais mon vin différemment, naturellement, depuis longtemps.

Leaving the AOC meant he’d have to market his wine as a vin de table, a table wine — in other words, the most common, least fancy wine at the very bottom of the French wine hierarchy.

But he didn’t care.

He welcomed the challenge of selling his so-called “table wine” on its own merits.

But there was one catch to Olivier’s vin de table — on the label in big letters he wrote his wine’s name…

Anjou Olivier Cousin…

With the first letter of each word in bigger, bolder print than the rest so they’d stick out… A O C.

This is where Olivier’s legal troubles truly began.

One day in 2009, Olivier got a letter from the viticultural federation threatening to take him to court unless he removed the word “Anjou” from the label.

They claimed the term belonged to the AOC, and not to Olivier.

He had a point — Anjou is the name of the province itself, not just the name of the wine appellation.

And, Olivier reckoned, there was no way anyone could think he was trying to pass off his wine as being part of the AOC because vin de table was clearly written on the label.

The AOC took Olivier to court, accusing him of defrauding the state and the public.

He faced a maximum penalty of almost 40,000 euros or two years in prison… all for having a misleading label on his wine bottle.

The case lasted from 2011 to 2015.

Olivier welcomed the attention as a way to push against what he saw as the real problem: the government’s focus on profitable wines that disregard the environment.

Olivier’s case kept getting handed off to different regional courts, picking up attention in the press along the way.

He got a lawyer.

Then, at one hearing in 2013, he and his supporters made a little spectacle in the courthouse square.

He arrived on his horse, named Joker, pulling a cart filled with wine.

As the 300 revelers partied and protested the hearings outside, in the courthouse, Olivier made his case.

He told the judge: “This is our children’s land to cultivate.” He took the opportunity to denounce the practices of synthetic, hyper-mechanized, conventional winemaking in France.

He and his supporters put on quite a spectacle that day, but eventually, Olivier lost.

He was obliged to remove the word “Anjou” from his wine label.

The French court found him liable for using the AOC label on his wine.

But the court only gave him a symbolic fine: two euros.

Both sides claimed victory.

But Olivier thinks the real victory lies in how young, passionate farmers have taken up the mantle of natural, artisanal winemaking.

And table wine’s reputation has also started to change.

The Cousin family’s agricultural tradition has passed on to the next generation.

Olivier and Claire have a son who’s a sommelier in London, a daughter who produces artisanal vinegar in a nearby town, and another son who’s taken over a parcel of the family land and makes natural wine — by draft horse — with his dad.

Olivier makes three varieties of wine with different names, and his wine is now simply known as “Olivier Cousin - Loire.”
