Episode 67: Traditions iconiques - French Gastronomy

Duolingo French Podcast

It’s 2002, and 19-year-old Stéphane Ranieri walks into the dining room of a castle, le Château de Divonne.

He gasps as he sees the gigantic mirror over the fireplace and the chandeliers hanging from the tall ceilings.

Stéphane and his parents are about to sit down for the meal of a lifetime: un repas gastronomique.

Tonight, he will eat 12 different dishes, and drink 12 different wines.

The dishes start arriving.

Waiters walk in, perfectly synchronized, carrying identical plates hidden under a stainless steel cloche.

One of them announces the name of the dish: “Noix de Saint-Jacques poêlées”! All at once, the waiters take the cloches off, revealing perfectly seared scallops.

Stéphane smells a whiff of butter, wine and parsley.

This dance keeps going for hours.

Finally, the star dish arrives: un confit de pigeon.

A silky, tender bird slowly cooked in its own fat.

Stéphane feels a rush of adrenaline.

He is freshly out of culinary school and that same morning, he had an interview with the chef at this very restaurant.

Now, more than ever, he really wants the job.

It’s hard to think of a time when French people didn’t gather around luxurious feasts.

From the ancient Gauls, to Marie-Antoinette’s courts, the French have always been known for sitting together at the table for long hours to enjoy exquisite feasts.

The heyday of royal banquets may be gone, but even today, a majority of French families share a meal together at least once a day.

And every week, they share a special meal that can last for several hours.

Sometimes a nice tablecloth is laid out, or a good bottle of wine is chosen.

After the appetizer, l’entrée, comes the main dish, le plat principal.

But it doesn’t stop here.

Even on weekdays, at lunchtime, business clientele gather for an hour or two around fixed-price menus: an appetizer, a main dish, and a dessert.

And when the French want to go all out, there is another important tradition they turn to: le repas gastronomique.

The French gastronomic meal, le repas gastronomique français, is such a unique aspect of French culture that in 2010, UNESCO added it to its list of Intangible Cultural Heritage.

But growing up in Clermont-Ferrand, a city in central France best known for its extinct volcanoes and its rugby team, Stéphane never experienced un repas gastronomique.

His family was gourmande, meaning they loved to cook and eat, but fine dining was not exactly affordable.

This all changed when Stéphane turned 15.

He wasn’t too fond of schoolwork, so he decided that instead of completing a typical high school degree, he would pick a trade, un métier.

Je voulais commencer à gagner ma vie rapidement.

Stéphane enrolled in a technical school to study culinary arts, l’art de la restauration.

There, he learned what it meant to work in a French restaurant: to create the perfect sauce, to cut and roast all sorts of meats, and to combine flavors.

Stéphane also did internships in local restaurants.

One day, one of the chefs he worked with gave him the low-down on what working in restaurants was like.

For Stéphane, the idea of becoming a chef took hold.

In school, he also discovered France’s most sophisticated culinary tradition: the famous repas gastronomique.

It was a special meal, with multiple courses, that always started with an apéritif, a pre-dinner drink, and always ended with a digestif, a small glass of liqueur.

And in between, a minimum of four dishes: an appetizer, a meat or a fish, a plate of cheeses, and a dessert.

Stéphane loved the little details that made le repas gastronomique special, like les mignardises, a sweet bite that comes after dessert, with coffee.

Stéphane also discovered something unique about the repas gastronomiques.

They’re often served in restaurants located in extraordinary places.

There is even an old network of castles that have been converted into hotels and fine dining restaurants, called des Relais & Châteaux.

Many Relais & Châteaux can be found in the Michelin Guide, le Guide Michelin.

They are books that use a star system to recognize the world’s best tables.

For many chefs, leading a Michelin star restaurant, un restaurant étoilé, is an honor they seek throughout their entire career.

Stéphane decided to apply for the job at a very elegant French Relais & Châteaux near the border with Switzerland, le Château de Divonne.

Its restaurant had one Michelin star.

Stéphane told his parents about the opportunity, and they reached out to Stéphane’s uncle, who lived in Switzerland, near the castle.

Shortly after, Stéphane was hired at the Château de Divonne.

He was thrilled.

He started with an entry-level position, as a chef’s assistant, un commis de cuisine.

He was in charge of a lot of essential prep work: from cutting carrots in perfectly identical squares to measuring exact quantities of flour and sugar for pastries.

After he got his dream job at the Château de Divonne, Stéphane climbed the ranks of the French cooking world.

He eventually became section chief in the fish and meat areas of another Michelin-starred restaurant.

He taught cooking classes and published recipe books.

But he wasn’t a chef in his own restaurant.

J’avais 28 ans.

One day, Stéphane saw an ad in the paper: a new restaurant was opening in Clermont-Ferrand, his hometown.

They were looking for a head chef.

But there was a twist: this restaurant gastronomique was not in a Relais & Châteaux.

Instead, it was in a place where you’d normally eat hot dogs and beer! This restaurant would be in the Marcel-Michelin stadium, home of the town’s rugby team.

Stéphane was hired as the head chef of L’En-But, which translates to The Goal Line.

The restaurant was in an extraordinary location: it sat on one side of the stadium, surrounded by giant windows offering a stunning view of the field.

To prepare for the opening of L’En-But, Stéphane and the owner rolled up their sleeves and got to work.

They imagined a unique dining experience for their future guests.

For the first time, as a head chef, Stéphane would be able to create his own menu.

Stéphane also got to hire his entire team.

One person in particular would be key to the restaurant’s success: the sommelier, the wine expert.

Together, they planned how different wines were going to be paired with every single dish on the menu.

Stéphane wanted to create a perfect culinary experience.

So he thought of everything he had learned over the years.

Un repas gastronomique went well beyond the food that was served in the plates and the wine that was poured in the glasses.

Every detail mattered…

Stéphane wanted to make sure the restaurant had an elegant décor that reflected the quality of the culinary experience.

But he also wanted people to feel the thrill of being in a rugby stadium.

So he decided to pay tribute to Clermont-Ferrand’s team and use their colors: yellow and blue.

The day of the opening was nerve-racking for Stéphane.

There was a rugby game and the Marcel-Michelin stadium was packed.

And it was the first time Stéphane served un repas gastronomique as a chef de cuisine.

The game day concept was a hit.

Diners congratulated Stéphane for his menu.

He had created a unique fine dining experience: a meal with a view and a game.

But he also wanted to make sure people could enjoy his food outside of games, even on a weekday, at lunchtime.

Stéphane wanted L’En-But to be open on game days but also from Monday to Friday, for lunch and dinner.

So he created menu options from 3 courses to 7 courses.

It was a big success.

Then, one day, in 2018, the owner of L’En-But came to see Stéphane.

He explained that he felt it was time for him to move on to new projects, and he thought that Stéphane should buy him out and become the next owner.

On game days, Stéphane loves to bring the exhilaration of great food to a great game.

Yes, he’s always hopeful his team will win.

But he also wants to make sure the dining experience is perfect.

When he’s satisfied, Stéphane heads to the kitchen.

There, he starts plating one of his favorite winter dishes, le chapon à la royale.

He begins with a handful of local roasted winter vegetables and chestnuts.

Then, he takes a young capon, stuffs it with truffles, and lays it on the bed of vegetables.

When the plates leave his kitchen, he sometimes watches as diners take their first bite.

Stéphane Ranieri is the head chef and owner of L’En-But, a fine dining restaurant in the ASM rugby stadium in Clermont-Ferrand.

To this day, his goal remains to create perfect moments with food, wine and rugby.

And since its opening in 2009, restaurants like L’En-But have opened in other big stadiums in France, like the Stade de France in Paris.
