Episode 81: La chocolatière (The Chocolate Maker) - Revisited

Duolingo French Podcast

Bonjour listeners! The world’s largest chocolate expo returns to Paris from October 28th to November 1st 2022.

It’s called Le Salon du Chocolat.

This event will feature tastings, workshops, demos from famous chocolate-makers, and more!

To mark the occasion, we decided to re-run an episode from March 2022 featuring a trailblazing chocolate-maker, or chocolatière, who has been to this expo many times.

Her name is Euphrasie Mbamba.

Euphrasie grew up on a cacao farm in Cameroon.

But she’d never tasted chocolate until she moved to Belgium.

And when she finally did… well… you’ll have to keep listening to find out!

Enjoy!

It was 1992 and ten-year-old Euphrasie Mbamba was living with her grandparents in a small village in Central Cameroon.

She spent her days going to school, playing with her cousins, and exploring her grandparents’ land, a cacao farm, une plantation de cacao.

Euphrasie knew better than anyone what to do with the fruits of the cacao trees.

Especially with those big, fleshy white beans, les fèves, inside the fruits.

One of her favorite activities was to play a special game of marbles, un jeu de billes.

For Euphrasie, the cacao beans were just that: a special toy that grew on trees on her grandparents’ farm.

She had no idea what happened to them after her grandfather packed them in huge bags and hauled them away.

She had never seen, or tasted, actual chocolate…

Growing up with her grandparents, Euphrasie saw her grandfather carry on a tradition that had been in the family for generations.

From dawn to dusk, he cultivated and protected his cacao harvest.

But no matter how hard he worked, it was tough to make a living on the farm.

When Euphrasie was two years old, her mom moved to Europe to work, so she could send her family money from abroad.

Meanwhile, Euphrasie stayed behind, with her grandparents, who raised her.

Then when she turned ten in 1992, her family shared some important news: she would be moving to Brussels, the capital of Belgium, to live with her mother.

It wasn’t just the weather that made Belgium very different from Cameroon.

Other things made Euphrasie’s new country seem strange: the people, their customs and…their food.

Some of her new favorites were les moules, mussels, and Belgian waffles, les gaufres.

One day, Euphrasie came across something totally new.

It was a small chocolate bar, wrapped in plastic.

She’d never seen anything like it before.

So she opened it.

It was the first time Euphrasie had tasted chocolate.

And she loved it.

Right away, she was aware this was a superior kind of treat, une gourmandise.

Euphrasie was in luck.

Belgium is one of the most renowned countries in the world when it comes to chocolate.

It’s particularly famous for its decadent pralines and truffles.

After that first taste, Euphrasie never missed a chance to enjoy chocolate again.

But, she never thought about how it was prepared, or the raw materials, la matière première, that it was made of.

This all changed when Euphrasie was in high school.

One night, she watched a documentary about chocolate on television.

There, they explained how chocolate was made.

On the screen, Euphrasie saw cocoa trees and cocoa beans, and she immediately thought of her grandfather.

Euphrasie thought about how much she enjoyed chocolate, her love for the cacao beans and everything she’d learned about them, working alongside her grandfather on the farm.

Suddenly, something clicked for Euphrasie, elle a eu un déclic… Euphrasie thought: what if I became a chocolate maker, une chocolatière?

But when Euphrasie told her family about her new chocolatière dreams, they told her to pick a more stable profession.

Euphrasie’s family was concerned about her future.

But there was something else.

Something Euphrasie had observed when she learned more about chocolate-making in Belgium.

So, Euphrasie listened to her family.

She agreed she’d choose a more reliable career path.

It was also around this time that Euphrasie received some devastating news.

Her grandfather in Cameroon had passed away.

For Euphrasie, it was more than a loss for the family; it also meant the end of their cacao business.

Cacao beans sold for so little money on the international market, farms like Euphrasie’s grandfather’s could no longer afford to pay people a fair wage.

Je me suis sentie vide.

After Euphrasie set her chocolatière dreams aside, she focused on her studies.

She made a career as a translator and started a family.

Almost 10 years went by, and in 2009, she left Brussels behind.

She moved with her husband and their son to Schaltin, a small town in Wallonie, a French-speaking region in the south of Belgium.

Still, she often thought about her grandfather and her childhood in Cameroon.

And in 2013, when Euphrasie became pregnant with her second child, Siméo, she felt something inside of her shift.

Suddenly, she felt capable of things that had previously been out of reach.

Moved by this new intuition, Euphrasie made a big, bold decision: she would follow her dream of becoming a chocolatière.

And she wanted to take that dream one step further: she would take over the family farm back in Cameroon, which had fallen into disarray since her grandfather’s death… She would try to save her family’s tradition.

Euphrasie signed up for a night course in candy making.

Every day, after work, she would put on her apron and practice making intricate Belgian delicacies.

But when the teacher showed them how to make chocolate candies, he handed Euphrasie processed chocolate chips, des pastilles de chocolat.

Euphrasie looked around her.

Nobody else seemed bothered that they weren’t using actual cacao beans.

But Euphrasie wanted to make chocolate from scratch.

So, she enrolled in a more specialized training with Belgian companies that transformed cacao beans into cacao paste, or pâte de cacao, and then finally into chocolate.

After a year, Euphrasie completed her training.

Then she began working with her uncle to put the family farm back into business.

As an expert in crop production, her uncle could help solve many of the problems they faced with planting, cultivating, and harvesting.

And he could help her figure out how to make cacao harvesting more ethical and pay their workers a living wage.

Euphrasie wanted to bring the cacao farm straight to chocolate enthusiasts.

So she started a new life, traveling back and forth between Belgium and Cameroon.

With the help of her uncle, they trained young people to produce quality cacao they could export to Belgium.

Meanwhile, she set up her very own chocolate workshop, her atelier, right in her backyard, in the tiny village of Schaltin.

It quickly became a family affair.

Euphrasie named her little store “Sigoji”, combining her two children’s names: Siméo and Ugo, and adding “ji” at the end for “goji berries,” des baies de goji.

She loved these red berries for their health benefits, and used them to make her first praline.

As soon as people tasted her chocolates, they knew they had found something unique and delicious!

Local residents were proud to support Euphrasie.

Her Sigoji chocolates became the gift of choice for dinner parties and holidays.

Word quickly spread beyond their town.

In 2016, two years after the opening of the garden atelier, Sigoji moved to a brick-and-mortar shop in a nearby town.

Then, in late 2018, Euphrasie received an email from Gault et Millau, a renowned French restaurant guide.

She had been nominated as the best chocolatier of the year.

Euphrasie ignored the email, went back to making chocolates and didn’t think about the invitation.

Then, she got a phone call.

The day of the ceremony, Euphrasie sat nervously with the other nominees, still unsure about whether Sigoji would really win.

Then, the presenter announced the results… Euphrasie had been named best chocolatière!

Euphrasie began receiving large orders from prestigious clients.

More awards followed.

To keep up with demand, she had to import cacao beans from other countries, like Tanzania, Ghana, and Madagascar.

Today, Euphrasie is proud to be leaving her mark in the Belgian chocolate industry.

Her shop Sigoji supports ten cacao farmers from her family’s farms in Cameroon.

She wants to continue to expand her business, so they can support more growers and keep the family tradition alive.

This is where our original episode ends, but a lot has changed for Euphrasie since we first shared her story.

She recently left us a message with some updates.

Let’s hear them from Euphrasie herself:

Bonjour !

2022 was a big year for Sigoji: their chocolates won medals in three different categories at the International Chocolate Awards, an independent competition selecting the world’s finest artisan chocolates.

Euphrasie is also working on some new chocolate creations for the holiday season.

She wants us to keep them a surprise, but she gave us two hints: gingerbread and champagne.

Sounds delicious.

Euphrasie plans to bring her decadent creations to North America and Asia, so she’ll be visiting a few chocolate expos around the world next year.

She’s a veteran of these events, and she has a special place in her heart for the Salon du Chocolat in Paris:

So if any of you chocolate lovers happen to be in Paris in the fall of 2022, head to la Porte de Versailles for miles of chocolate tastings, workshops by famous chocolatiers, a fashion show featuring chocolate dresses, and much more.

Bon Appétit !
