Episode 95: La championne du fromage (Cheese Champion) - Revisited
Duolingo French Podcast
Bonjour dear listeners!
In many countries around the world, March is Women’s History Month.
To mark the occasion, the Duolingo French Podcast is revisiting some of our favorite stories from women trailblazers across the francophone world.
Today, we’ll feature an episode from March 2020.
It’s about a very special foodie from Arras, a small town in Northern France.
Her name is Virginie Dubois-Dhorne.
And her story is a love story…with a twist.
Yes, it’s about how Virginie met her husband Jean-François in college.
But it’s also about a woman who discovers a love for selling cheese! Love works in mysterious ways… and it took Virginie to places she had never dreamed of! Keep listening to find out how! And stay tuned at the end for an update from Virginie.
Now, onto the episode!
Growing up in the North of France, near Belgium, Virginie Dhorne loved eating cheese.
But she hated going to buy it at la fromagerie, the cheese shop.
As an adult, Virginie was certain she’d never work in retail: she wanted to be a university professor, and a mother.
In 2003, at the age of 28, she was on track to do both.
She was pursuing a PhD in literature, and was engaged to a political science graduate named Jean-François Dubois.
Virginie was content with her vision for the future and the life she was building with Jean-François.
Until the day Jean-François announced that he’d found his true calling: he wanted to open… a cheese shop.
Jamais.
Ma vie, ce n’est pas ça… »
And yet, 15 years later, Virginie would find herself eating her words…
Virginie first met Jean-François when she was a teenager, at their church.
But they didn’t start dating until eight years later, when Virginie was living in Boulogne, a coastal town in the north of France.
Jean-François was studying politics in Paris and he invited her to visit.
When they got engaged, Virginie was still working toward her PhD.
But Jean-François had graduated, and was struggling to figure out what to do.
He knew one thing, though.
He didn't want to go into politics and he knew a traditional office job wasn’t for him.
Jean-François’s mother ran food trucks at farmers markets—les marchés.
So, feeling stuck, Jean-François decided to try the family business.
While Virginie stayed in Boulogne to finish her studies, Jean-François moved home.
Virginie would visit on the weekends.
One weekend, as they were planning their wedding, Jean-François told Virginie he had a brilliant idea for a business.
One that would focus solely on cheese.
Virginie could not have disagreed more.
She loved Jean-François, but she didn’t want to get sucked into a line of work she had no interest in.
Four months after the wedding, Jean-François opened his own fromagerie.
Virginie was pregnant, but the pregnancy was complicated, so the doctor told her to avoid being on her feet, and rest.
While Virginie was trying to take it easy, business in the cheese shop was picking up, and Jean-François needed help.
At first he just asked if Virginie could work the register—la caisse.
Virginie felt like she could handle this.
But she made one thing clear: she would handle just the register.
Not the cheese.
After giving birth, Virginie prepared to get back to her studies.
But then, she found out she was pregnant—again.
While Virginie was learning to be a mother, Jean-François was making plans to extend the business to provide for the family… and follow his passion.
Some French cheesemongers focus purely on selling cheese, but others work on aging cheese to make it more delicious.
They are called fromagers affineurs.
Virginie knew this also meant going deeper into the stinkier side of the cheese business.
Jean-François wanted to oversee l’affinage, cheese ripening.
It’s a maturing process that gives each cheese its rind, and its particular taste and smell.
It’s pretty hands-on.
In 2005, Jean-François had an opportunity to buy a new cheese shop—which came with its own actual caves for l’affinage.
It was too good to pass up, but someone else would have to run it while he worked on ripening the cheeses.
Very reluctantly, Virginie took over the new shop.
Virginie dropped out of her PhD program permanently.
It was not an easy decision.
She had been devoted to her studies, and her family had sacrificed a lot to pay for them.
To her dismay, in the new shop, Virginie was becoming the thing she liked least: a cheesemonger, une fromagère.
And she was terrible at it.
Clients would come and ask for un Pyrénées brebis, a sheep’s milk cheese from the Pyrenees mountains on the Spanish border.
She’d look down at the cheese display, and search…
Je regardais tous ces fromages.
Je me demandais : « Il est où ? Qu’est-ce que c’est ? ».
Then came her first Christmas.
People started coming to her to order cheese boards, des plateaux de fromages, for Christmas dinner.
According to Virginie, a proper French cheese board has at least five kinds of cheese.
And there’s a real art to designing a cheese plate: in addition to picking cheeses that go well together, la fromagère has to cut them and decide how they’re to be displayed.
As Virginie handed out her cheese plates, she saw something she hadn’t quite noticed before at the cheese shop: the look of joy on the faces of her customers.
Alors mon cœur a changé.
Je suis tombée amoureuse du fromage.
Those 300 cheese boards changed everything.
Now all Virginie wanted was to be great at her job, to keep making her customers happy.
She redesigned her store to include every kind of cheese: gooey, runny soft cheeses, des fromages à pâte molle, and hard cheeses, des fromages à pâte dure.
The store was thriving, and Virginie was increasingly excited by her work.
But every once in a while, her family would bring up her abandoned studies.
And as her four kids got older, Virginie found herself coming to terms with how the world saw her: as a wife and a mother above all else.
Virginie was itching to prove herself—if not by getting her PhD, then at least in the world of cheese.
So in 2016, she decided to enter a national contest for best cheese board, the Lyre d’Or.
Her husband encouraged her to enter, but she didn’t tell anyone else… until she won the gold medal, la médaille d’or.
Tu as fini première à un concours national ? Tu as gagné la médaille d’or ! ».
Virginie had gotten her first taste of success and she wanted more.
So she quickly set her sights on an even fiercer competition: Le Mondial du Fromage, the World Cheese Competition—an international event pitting the world’s best cheesemongers against one another.
The competition takes place every other year and they only accept about a dozen contestants from around the world.
Virginie was accepted in 2019.
She was the only French person among the competitors, or candidats.
Virginie worked tirelessly on her cutting skills.
Could she cut four identical, 250-gram pieces of cheese? Did she know all her cheeses? Cheesemongers need to know everything about a given cheese: the taste, the texture, even the breed of cow it comes from.
Virginie’s academic background helped her prepare.
À l’université, on a l’habitude d’apprendre.
To have a shot at winning, Virginie would have to know everything about the most famous cheeses in Europe.
She had to be able to recognize any of them in a blind tasting, une dégustation à l’aveugle.
Jean-François wanted Virginie to succeed, so he helped her train.
For four months leading up to the competition, he would prepare plates with numbered pieces of cheese.
Virginie would test herself alone at her kitchen counter at night, after the kids were in bed.
J’étais seule, en silence.
Je me concentrais.
The day of the competition was sweltering hot.
But Virginie was calm.
She got through the blind tasting portion, then turned her attention to the plating event.
Contestants bring their own decorations, but they only find out the size of the plate and the cheese selection during the competition.
Once the clock started, Virginie had five minutes to pick her cheeses.
She wanted to fashion her cheese board as a cornucopia, une corne d’abondance.
First, she grabbed a Petit Basque, a semi-hard aged sheep’s milk cheese.
She used a spoon to scoop out balls out of it, des billes.
When her time was up, Virginie confidently turned in her cheese board.
She wasn’t sure she’d gotten all the five cheeses right in the blind tasting, but she knew she had aced her cheese platter.
Virginie came in second place in the competition.
It was a close second: there was less than half a point difference between her and the winner.
Out of 200 points! She was thrilled.
Virginie is grateful that she eventually gave cheese-mongering a chance.
She still finds it hard to believe how things turned out, that she once hated the thing that led to her passion in life.
Now she’s a proud fromagère, and a proud champion.
Today, Virginie Dubois Dhorne runs her family business with her husband.
And Virginie recently shared some really important news.
She left a message for us via Whatsapp, so you may notice her French sounds different from the original audio recording:
“Bonjour.
That’s right! In 2019, Virginie won second place at the Mondial du Fromage, but in 2021… she won first place! She officially became the World’s greatest cheesemonger!
Virginie went from being in the shadows to standing in the spotlight, de l’ombre à la lumière.
Today, as she travels across France meeting other cheese enthusiasts, she’s reminded of all the unexpected turns her life took…for the best.
Indeed, as Virginie says: Life is beautiful and we must live it with courage, passion, will and heart.
